Broccoli Soup

Fiber and Vitamins rich soup

The Sulforaphane in Broccoli helps counteract the processes associated with development of vascular disease in diabetic people. It promotes production of enzymes that protect blood vessels and reduce high levels of molecules that could lead to considerable cell damage.


Broccoli - about 1 cup of florets

Onion - 1 (chopped)

Skimmed Milk - 1 to 1 cups

Water - 1 cup

Flax seed flour - tbs

Salt and pepper to taste

For garnishing - Use coriander leaves and celery leaves





  • In a kadai add a tsp of oil and saute onions
  • When the onions start browning, mix in the broccoli florets and give a good toss
  • Add a cup of water and let it cook for 5-7 minutes
  • Switch off the flame and let it cool down to room temperature
  • Blend to a puree in the mixer adding milk as required
  • If it is too thick, you could add more water or milk
  • Put it back into the kadai and cook it for another 3-5 minutes
  • Add flax seed flour and enough salt and pepper to taste.
